Re. research by Behall et al. on barley and lipids
An excerpt from an article "Beyond Oat Bran" by Janet Raloff
in Science News (May 26, 1990, vol. 137, pages 330 - 332):
...tocotrienol, an oily antioxidant related to vitamin
E. Further work by Qureshi, the Newmans and others now
indicates this chemical operates by inhibiting the
body's synthesis of cholesterol. Says Rosemary Newman,
"We have not seen any other grain that carries barley's
double whammy" -high levels of cholesterol-countering
beta-glucan and tocotrienol.
The above excerpt is from page 331 in the aforecited article.
Three excerpts regarding the academic affiliations of the
aforementioned Qureshi and the Newmans:
Most U.S. barley goes into livestock feed, which
explains why Walt Newman, an animal nutritionist at
Montana State in Bozeman, became interested in the
grain.
...and his wife, human nutritionist Rosemary Newman,...
...Asaf A. Qureshi and his colleagues at the University
of Wisconsin-Madison...
The above three excerpts are from page 331 in the aforecited
article.
My (RKSJR's) sources of barley are primarily from two
sources: i. hulled barley which I purchase in bulk from a
food co-op, mostly for boiling with lentils to add to
cooked rice or to add to vegetable stews, and ii. barley
flakes from Arrowhead Mills (still in business but no longer
supplying barley flakes) or from Bob's Red Mill (see link
below) which (barley flakes) I add to breakfast cereal.
